Adjacent to Tatsue-ji Temple, the 19th temple on the Shikoku Pilgrimage, this rare brewery has been preserving traditional soy sauce and miso-making methods using cedar barrels since its establishment in the Meiji era, over 120 years ago. All of their soy sauce and miso ingredients are directly sourced from producers, and they are committed to conveying the benefits of fermented food through the hands-on miso-making activity they offer. After making your own authentic miso with carefully selected ingredients, enjoy a healthy, light lunch featuring low-sodium salted koji made with live malt and the brewery's signature miso.
